Thai Cooking Class

One of the days in Chiang Mai we signed up and attended this Thai Cooking School...it was something that Shawn and I have always wanted to do and so it was a great opportunity to do it with the girls.....we were picked up at our guesthouse and taken to the local foods market..where we were taught that the cheapest eggs are the best...because the cheapest egg is the smallest and has the most flavor because it mean s that the chick is young and just starting to produce...the older the chicken the larger and less tasty the egg...okay good to know...the brown eggs are chicken and can stay out at room temperature but if you wash them then they must be refrigerated...don't really understand but okay....then on to the noodles...noodles are either made of rice flour, egg, or soybean flour....and you can buy them freshly made at the market.....then onto the rice....rice is a staple here and you never want to waste any rice because it is quite a lengthy process and they workers work sooo hard for every grain of rice....when it comes to buying rice you want the most expensive...they hae blue rice, yellow rice, rice for making stiky rice, the cheapest are just the broken bits of rice, and so on.....very interesting....we were taught that coconut juice is the juice inside the coconut, then mash the insides and it makes coconut cream, half it with water and you get coconut milk......then the curry pastes, you can but them and if you stir fry the paste then you can leave it in a jar on the counter for up to six months......very interesting....what a great day!!! We each got to make five different dishes and ate all day long!!!
